Huckleberry Cornmeal Muffins!
These muffins are so moist and delicious, you’ll want to make these a summer favourite for years to come!!!
1 1/2 cups (195 grams) all-purpose flour
3/4 cup (125 grams) cornmeal
1/3 cup granulated white sugar
4 teaspoons of baking powder
1/8 Teaspoon salt
1 large egg, lightly beaten
1 cup of 2% milk
1/4 cup melted butter
(Optional) 1 teaspoon vanilla extract
*½ Cup of Huckleberries
Keep it simple (Preparation):
In a large bowl, add the dry ingredients first (Except the huckleberries), mix!
Then, add the wet ingredients and stir till smooth. Lastly, take a tablespoon of flour and mix it with the Huckleberries in a separate bowl, add the Huckleberries to the wet mixture now.
In a well-greased muffin trey, add a scoop of the muffin mixture, or two. Just make sure that you don’t fill it to full.
Place the trey in the oven, which is to be preheated to 400 degrees F (205 degrees C). Bake these delicious muffins till they are lightly tanned, and a toothpick comes out clean.
Bake for 15-20 Minutes!
